Isla is in that stage where she loves to help out with anything and everything. Today she used her @cocovillage Learning Tower and baked oatmeal apple cookies “all by herself”. She felt like such a big girl being able to reach everything on her own. Independence is so important at this age so I love that I am able to give Isla the freedom to explore her new found independence and master the skills that come along with it. The Learning Tower is perfect for helping out in the kitchen with cooking and chores, as well as eating quick snacks (one of Isla's favorites), reaching light switches, the activities are truly endless.

Cookie Recipe
Ingredients
2 cups old fashioned oats
¾ cup all purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup apple butter
1/2 cup butter room temperature
1 egg
1 teaspoon vanilla extract
2/3 cup brown sugar or white sugar, honey, maple syrup
Instructions
In a medium bowl, mix the oats, flour, baking soda, cinnamon, and salt together.
In a separate large bowl, beat the remaining butter, brown sugar, apple butter, egg, and vanilla extract together.
Add in the flour mixture to the wet ingredients, stirring just until just blended.
Preheat the oven to 350° F
Line a baking sheet with parchment paper or line with a silicone mat.
Drop the cookie dough onto the baking sheet and flatten slightly.
Bake for 15-18 minutes until golden brown
Cool on the pan for about 2-3 minutes, then transfer to a wire rack.
